North Indian Style Baingan Bharta Recipe | Smoky Eggplant Stir Fry Recipe | Scroll Recipe
Ingredient:
• 1 big size eggplant
• 2-3 garlic
• 2 Chilli
• 1 TSP garlic grated
• Coriander
• Mustard oil
• chopped chilli
• ¼ cup+ ½ cup chopped onion
• salt to taste
• 1 TBSP chopped ginger
• TSP cumin seeds
• 1 silted chilli
• 1 TBSP chopped ginger
• 1 TSP garlic paste
• ¼ cup chopped tomato +1 TBSP
• Add 1 TSP cumin powder
• Add ½ TSP turmeric powder
• Add 1 TSP red chilli powder

Process:
Step 1
• Take a big size eggplant
• Slit in eggplant
• Place 2-3 garlic, Chilli, 1 TSP garlic grated, coriander within the slit
• Brush eggplant with mustard oil
• Roast until it is cooked
Step 2
• Remove from flame, peel, mash and keep it aside
• Add chopped chilli
• Add ¼ cup chopped tomato
• Add salt to taste
• Add ¼ cup chopped onion
• Add 1 TBSP mustard oil
• Mix it nicely
Step : 3
Heat the pan and add 1 TBSP mustard oil
Add 1 TSP cumin seeds
Add 1 silted chilli
Add ½ cup chopped onion
Add 1 TBSP chopped ginger
Add 1 TSP garlic paste
Add ¼ cup chopped tomato
Add 1 TSP cumin powder
Add ½ TSP turmeric powder
Add 1 TSP red chilli powder
Fry it for 5-6 mints
Add salt to taste
Add mashed eggplant
Mix it nicely
Serve with roti
