Pui Shaaker Chorchori

Ingredients:
4 TBSP mustard oil
1bay leaf
1 1/2 TSP punchfuran
1 diced potato
1/2 TSP turmeric powder
1 cup diced raddish
6-7 jackfruit seeds
1 cup diced pumpkin and fry it
1 cup diced brinjal
salt to taste
2 TSP red chilli powder
250gm malabar spinach
8-10 fried bari (bori)
2 TSP sugar
1 TSP roasted cumin powder
1 TBSP ghee

Process:
• Heat the pan and add 4 TBSP mustard oil
• Heat the oil
• Add 1 bay leaf
• Add 1 1/2 TSP punchfuran and sauté it for a few second
• Add 1 diced potato
Add 1/2 TSP turmeric powder
Add 1 cup diced raddish
Add 6-7 jackfruit seeds
Add 1 cup diced pumpkin and fry it
Add 1 cup diced brinjal
Add salt to taste
Add 2 TSP red chilli powder
• Add 250gm malabar spinach
• Keep stirring for a 5-6 min
• Cover with a lid for 7-8 mints
• Add fried bari (bori)
Add 2 TSP sugar
Cover with a lid until its fully cooked
• Add 1 TSP roasted cumin powder
Add 1 TBSP ghee
• Mix it nicely
• Serve hot with paratha or rice
