Shami kebabs may be served with roti along with ketchup, hot sauce, Schezwan sauce,chilli garlic sauce, raita or chutney. Before serving the kebabs, it is also common to dip them in a beaten egg mixture and double fry them. They are also commonly eaten in Hyderabad with cooked rice or chapati. Ingredients:
• 250 grm boneless chicken
• Cinnamon (1 inch) , black pepper (3-4), cloves (3-4), cardamom (3-4)
• 1 TSP cumin seeds
• 1 Black cardamom
• 1 cup soaked chana dal
• 1 TBSP ginger garlic paste
• Salt to taste
• 1 TBSP red chilli powder
• 1 TSP coriander powder
• 1 TSP cumin powder
• stone flower/Phattar Phool
• 2-3 reen chilli
• Coriander leaves
Process:
• Add oil in a cooker
• Add cinnamon (1 inch), black pepper (3-4), cloves (3-4), cardamom (3-4)
• Add 1 TSP cumin seeds
• Add 1 Black cardamom
• Sauté it for few mints
• Add 1 cup soaked chana dal
• Add 250 grm boneless chicken
• Add 1 TBSP ginger garlic paste
• Add salt to taste
• Add 1 TBSP red chilli powder
• Add 1 TSP coriander powder
• Add 1 TSP cumin powder
• Mix it nicely
• Add stone flower/phattar phool
• Add green chilli
• Add 1 cup water
• Cover with a lid
• Pressure cook 4-5 whistles
• Transfer into a food processor /grinder
• Prepare a smooth paste
• Transfer the kabab mixture to plate
• Add the fine chopped coriander leaves
• Mix it nicely
• Dab enough oil on your palm
• Roll the mixture into small ball and give kabab shape
• Add oil in a pan and heat the oil
• Place the kababs
• Fry on medium heat till brown color
• Flip the kababs
• Fry another side
• Serve hot with chutney
