Moong Dal Khichdi Eggplant Fry Begun Bhaja

Khichdi preparation:

Ingredient:
1 Cup Rice
1 Cup Moong Dal
Cumin seeds 1 TSP
Whole red chilli -2
Turmeric Powder 2½ TSP
Diced potato and Tomato -1
chopped Chillies
Roasted cumin powder 1 TSP
Garam Masala 1 TSP
fried cauliflower (1 cup)
Green Chilles – 3
1 TSP sugar ( optional)
chopped ginger 1 TSP
Ghee 1 TBSP

Process:
Rinse 1 cup rice and 1 cup Dal in a pot separately
In a cooker heat 2 TBSP oil
Add cumin seeds 1 TSP
Add Whole red chilli -2
Saute in law flame
Add Turmeric Powder ½ TSP
Add Diced potato and Tomato -1
Add Drained rice 1 Cup
Add Drained Dal 1 cup
Add Turmeric Powder 1 TSP
Mix it nicely
Add 3-4 cups of water
Add chopped Chillies 4
Pressure cooker – 2 whistles
When pressure release naturally and stair well
Cook for another 15 mints and keep stirring :
Add hot water 1 Cup
Add roasted cumin powder 1 TSP
Add hot water 1 Cup for consistency
Add 1TSP Turmeric ( if required)
Add Salt to taste
Mix it nicely
Add Homemade Garam Masala
Add Stir fried cauliflower (1 cup)
Add 1 TSP sugar ( optional)
Add chopped ginger 1 TSP
Add Ghee 1 TBSP

Eggplant Fry /Begun Bhaja:

• 1 eggplant/ brinjal
• 1 TSP salt
• 1 cup mustard oil
• 2 TSP turmeric

Process:

Diced Begun/ Egg plant
Marinate for 5-7 minutes with Turmeric powder and Salt.
Heat the Oil
Fry eggplant/ brinjal
Fry till color change into golden Brown
