Ingredient
• 1Kg Mutton
• 1 Cup Mustard oil
• Bay leaves
• 2 TSP garlic juice
• 1 black cardamom
• 1-inch cinnamon
• 7-8 sliced onion
• Salt to taste
• 2 TSP turmeric powder
• 1 TBSP coriander powder
• 2 cups of whisked curd
• 2 ½ TBSP atta
• ½ TBSP black pepper
• 1 TBSP red chilli powder
• 2 TBSP ginger garlic paste
Nihari Masala:
• ½ jaifal or 2gm
• 5 gms green cardamom
• 1 gm All spice
• 5-6 long pepper
• 2 gms Stone flower
• 1 dried galangal
• 1 gm Vetiver Roots
• 1-inch cinnamon stick
• 1 gm black pepper
• 1 ½ TBSP or 3 gms Cumin seeds
• 5 gms dried rose petals
• 1 javitri
• 2 black cardamom
• 4-5 cloves

Process:
Step 1:
• Roast all masala till aromatic -Javitri, Cumin seeds, black pepper, jaifal, Green cardamom, All spice, long pepper, Stone flower, dried galangal, Vetiver roots, cinnamon stick, dried rose petals, black cardamom, 4-5 cloves.
• Grind it to a fine powder and keep it aside.
Step 2:
• In a deep handi add 1 Cup Mustard oil
• Add bay leaves
• Add 2 TSP garlic juice
• Add 1 black cardamom
• Add 1-inch cinnamon
• Add 1 staranies
• Add 7-8 sliced onion
• sauté it for 6-7 mints
• Add 1Kg Mutton
• Add 1 TBSP ginger garlic paste
• Add Salt to taste
• Mix it nicely and roast it
• Add 1 TBSP red chilli powder
• Add 2 TSP turmeric powder
• Add 1 TBSP coriander powder
• Mix it nicely
• Add 2 cup of whisked curd
• Add hot water and mix well
• Cover and cook on low flame till the mutton is completely cooked

Step 3:

• In a bowl add 2 ½ TBSP atta
• Add Nihari Masala
• Add 1 ½ cup water
• Add ½ TBSP black pepper
• Mix it nicely

Step 4 :
• Once Mutton will completely boiled add Slurry

Step 5 :

Tira:

• Heat the pan and add nihari masala
• Add ½ Cup Ghee
• Add ½ TBSP kashmeri red chilli powder
• Add 1 TBSP Kewra water
Step 6:
Stain the slurry and Transfer this slurry into handi
Step 7:
• Cook till the gravy thickened
Step 8 :
Serve hot
